I love the big family style meals where there are heaps of dishes in the middle of the table and everyone just helps themselves. It feels so homely, (so hygge!) and I feel like it brings us closer together by the simple nature of sharing from the same dish. This is one of the things I'm looking forward to the most post-covid! Burrito nights with my pals!
I wanted to share with you my Guacamole recipe AND my Pico de Gallo recipe as they are nutritious, super tasty and versatile!
Homemade Chunky Guacamole:
(Serves... 1 - 10 people depending on who's there!!)
2 Ripe Avocados
1/2 Lime
Pinch Salt
1 tbs red onion , finely chopped
1/4 cup cherry tomatoes, finely chopped
Optional: Cholula hot sauce
To make: In a bowl, mash avocado, squeeze in the lime, stir in the onions, tomoatoes and salt and drizzle with a little hot sauce. That's it. So simple and SO SO good and full of healthy fats from the avocado.
Pico De Gallo (Tomato Salsa)
I take this to dinner parties and it's always a hit and is a great side to so many things not just tacos, burritos, quesadillas or nachos - though these are a great start.
To make:
(Serves 4 - 6)
1-2 Packets Cherry Tomatoes , finely chopped
1 bunch coriander
1/2 red onion, finely chopped
1-2 limes
1 pinch salt
Chop it up, mix it all together in a bowl. (It's quite literally that simple - I don't do fussy recipes!)
I usually eat these two things in a wrap to make a burrito (we are gluten free) or a hardshell taco (so good) and with spicy minced beef from our local butchers (higher in omega-3 fatty acids) or smashed up black beans and with crunchy lettuce but you can do whatever your little heart desires as they are great accompaniments to lots of things and go brilliantly on toast!
