Recipe: Caramelised Banana Pancakes

These decadent little beauties are so worth the effort on a Sunday morning! Here are some fun facts about these Caramelised Banana Pancakes right here:


#1 They are gluten-free (hoorah!)

#2 They taste flipping GREAT

#3 They are fluffy and light but also filling

#4 Do you really need to know anything else?


I make a variation on these beauties almost every weekend because life should not be without pancakes. No matter what.

You'll need:

2 Bananas

3 Eggs

55g Cassava Flour

1 Big Pinch Baking Powder

1 Pinch Salt

2 Glugs of Maple syrup (one for bananas, one for the pancakes)

2 Snippets of butter (one for the pan, one for the bananas)

1 pinch cinnamon

1/2 Cup Greek Yoghurt or Coconut Yoghurt etc


Here's what to do for the pancakes:

Put eggs, 1 banana, baking powder, cassava flour and pinch of salt into food processor. Blitz it until it's smooth. Melt a little butter in the pan and do the pancake thing. Flip them when they start to bubble on the top. Low and slow is best.


For the bananas:

Slice bananas about 1 inch thick. Melt one snippet of butter in the pan, add a glug of maple syrup and cinnamon and stir as it caramelises. It'll burn if you ignore it or turn it up too high. When it's thickened and browned put the banana slices in and fry for about 1 minute on each side or until golden brown. (These are guidelines, go with your gut!!)


To assemble:

Stack your pancakes.

Admire your skills.

Pop some yoghurt on top (that's extra protein you see and we love that extra protein)

Add the sexy sweet bananas with little squeals of delight.

Drizzle with maple syrup. (Or if you're me you'll tell everyone drizzle and then free pour that sweet stuff like a mad woman)


Eat it. Don't over complicate it Enjoy it.
