As cliche as it may seem I really bloody love avocado on tasot! I am a big fan of rye and other more traditional wheat varieties because they have more flavour, fibre and generally tend to be less processed. Rye is nutty and rich - I love it. It goes really well with the tanginess of feta.
Here's what you need:
Serves 2
- 2 Pieces of dark rye or sourdough toast
- 1 Avocado, nice and ripe
- 1/2 a block of feta
- Mint leaves
- Lemon juice
- Optional: cheery tomatoes, diced
Here's what you need to do:
- Roughly smash the avocado and crumble in the feta. Fold it through. Squeeze in lemon. Whack it on the toast. Top with diced tomatoes, salt, pepper and mint leaves.
So easy. So good.
